
I love finding new recipes that make me excited to eat and are healthy. Little known secret...I LOVE BREAD, but I'm careful what kind of bread and how often I eat it. Being able to trick myself into making things look like the other things I love (e.g. waffles). I found the recipe for cauliflower hash browns and modified it to meet my personal likes. I tried several different ways to add topping giving a sweet a savory options.
Cauliflower Waffles
5 servings | 15 minutes
1 head cauliflower (riced or shredded)
2 large eggs
2 Tbsp coconut oil
1 bunch scallions, chopped (for savory waffles)
2-3 Tbsp sharp cheddar (for savory waffles)
Salt and Pepper to taste
Use a food process or cheese grater to rice the cauliflower and stems. Transfer cauliflower to a large bowl, stir in eggs, coconut oil, scallions (optional), cheese (optional), salt and pepper. Spoon about 3/4 -1 cup into the center of a well-greased waffle iron, heated to high heat. Cook until golden brown (about 8-10 minutes). Remove from iron with a fork and spatula (I used a small plate and turned them over while still in the waffle iron onto the plate). Garnish with your preference of sweet or savory ingredients and enjoy! (We used fresh fruit on one and homemade quinoa macaroni on the other. )
